An analysis of the 2019 hop harvest shows a tightening market for hop varieties seen as key for modern IPAs. While increased acreages for the likes of Citra, Mosaic, and Simcoe help, less common hops present an opportunity for small-batch, taproom-only beers to separate themselves from the now-ubiquitous New England-style IPAs found in grocery stores all over.
