As spontaneous fermentation beers continue to pick up gravity with American beer enthusiasts, the brewers who produce them are constantly searching for new ways to "bring the funk" like never before. For Greeley, CO’s Wiley Roots Brewing Company, this means a disco ball in their barrel room. It gives the millions of yeast and bacteria bugs hanging out the chance to bathe in bright rays of color as they get down with the important work of fermentation. And while it may not exactly affect the flavors being produced, it does show that Wiley Roots knows how to party.
