Good Beer Hunting

no. 213

Side Project's Cory King and Firestone Walker's Jeffers Richardson—along with others from the Firestone Walker team—stand overlooking King’s new coolship at Side Project's soon-to-be new brewery. They’re like kids in a candy shop, gawking at the new equipment and discussing the possibilities.

The Firestone crew is in St. Louis for a tapping event at the Side Project Cellar, and King took everyone on a tour of his new space after the event. It’s a short walk down the street from The Cellar and will give King plenty of room to grow his oak-aged sour beer program. Until recently, King had been brewing and aging all of Side Project’s beer at Perennial Artisan Ales, where he worked as head brewer.

The new space is beautiful—shiny stainless on one side, rustic, custom foedres on the other. Oh, and about those foedres—King recently started inoculating those. Get ready, St. Louis.
